Cajun Microwave

The Structure

The Cajun microwave is simple a thick wooden box. Typically Cypress wood is used to make these units. It is lined with steel on the inside to hold charcoal.

This is covered with a metal tray or mesh. This mesh separates the meat from the charcoal and allows proper cooking. The whole assembly is covered with a lid.

It also has legs to give it some clearance from the ground to that the heat does not affect the ground.

How to Use a Cajun Microwave?

Cajun microwaves are easy to use. If you have some experience with traditional ovens or barbecue grills, this is just a piece of cake for you.

Place the hot charcoal pieces in the bottom of the box. You can also use dried sticks or other forms of wood. Now cover the hot coal with the mesh. Place your meat on this mesh and cover the box with the lid.

By monitoring the amount of fuel, you can adjust the temperature within the microwave. Ideally 110 C to 135 C is a good temperature range to cook meat. The crust becomes hard, but the interior remains juicy.
