Apple Microwave Bread Pudding Recipe

Puddings have been something that I have been pretty good at. I had figured out the basic pudding recipe really well.



But I always like to add some creativity to that pudding. Small changes to a real good recipe can make it more favorable among different people like seniors and teenagers.

This recipe is a simple Apple bread pudding made in a microwave. It is not just tasteful but quite healthy as the fat content is low.

Yield : 4 serving

Ingredients:

  • 1 package (4 servings) Jell-O sugar free vanilla cook and serve pudding mix
  • 2 cups fat free milk
  • 1 cup (2 small) cored, peeled and diced cooking apples
  • 1/4 cup seedless raisins
  • 1 teaspoon apple pie spice
  • 1 teaspoon vanilla extract
  • 4 slices reduced calorie bread, cubed

Instructions:

  • In a 8 cup microwave safe bowl, combine dry pudding mix and milk
  • Cover and microwave on high (100% power) for 5 minutes or just until mixture start to boil, stirring after 2 minutes
  • Stir in apples, raisin, apple pie spice and vanilla extract
  • Continue to microwave on high for 2 minutes
  • Gently stir in bread cubes
  • Continue to microwave on high for 1 1/2 minutes
  • Place bowl on counter and let set for 5 minutes, stirring occasionally
  • Evenly spoon mixture into 4 dessert dishes. Good warm or cool
