Coating

Fudges come out best when the cooked fudge is poured in a plate. However to ensure that the mixture doesn’t stick to the plate after cooling you need to separate the two. You can do it in two ways:

  • Wax / non Stick Paper - This is a great technique where you line the pan/ plate with this paper. Once cooled, you can simply lift the paper off. You can also cut the cooled fudge into small pieces and peel of the paper. This is a simple and clean way of making fudge.
  • Butter Lining - Lining the pan/ plate with a thin film of butter is an equally effective technique. Typically a table spoon of butter is ample for a pan full of fudge. It is best to use naturally softened butter. You can do this by placing small butter cubes on your counter for about an hour. A simple method for buttering the pan is to blot soft butter on a paper towel and rub the inside of aluminum baking pan to give it an even coat of butter.

Cooling

Cooling the fudge properly is a very important step in fudge preparation. Never start cutting the fudge till it is well cooled. You can check this by looking at the fudge surface. If it is looks too shiny; you might want to wait a bit longer.

Yield : 64 - 1" pieces

Ingredients:

  • 1 tablespoon butter for buttering the pan
  • 1/2 cup butter
  • 3 1/2 cup confectioners' sugar
  • 1/2 cup pure unsweetened cocoa
  • 1/4 cup milk
  • 1 tablespoon vanilla extract

Instructions:

  • Butter an 8 x 8 inch aluminum baking pan using 1 tablespoon of butter
  • Combine the confectioners sugar, cocoa, 1/2 cup butter, milk in a large microwaveable bowl.
  • Heat the mixture in the microwave on high power until the butter melt (about 2 1/2 to 3 minutes)
  • Stop and stir the mixture once during the process
  • remove the mixture from the microwave and using a rubber spatula, stir it until smooth. stir in the vanilla extract.
  • Pour the mixture into a baking pan and use a spatula to smooth it.
  • Allow it to cool at room temperature for about one hour
  • When it is cool, use a knife to cut it into 64 of 1" squares.

Warning:

  • Microwave vary and so does the cooking time. Just remember that 30 seconds too much or too little can make a big difference in a final product. You can add a few seconds but you can't subtracts the time.
  • Overcooking can dry out your fudge. If you do overcook, you can add a tablespoon of water or milk to the fudge and stir to regain consistency
