At the turn of last century Americans started making what they called the brittle.
These are American versions of the equally popular French Praline. The reason for such a name is the feature of the candy. It tends to break into pieces like glass (which is very brittle).
I have been working on brittle recipes and here is one real classic which is very simple and straight forward to make. It comes from my brittle lumpy Ann Duckers.
